All bread, including white bread, yes  white bread contains a healthy amount of fibre, Vitamin B, manganese, calcium and Zinc. 

From time past to present day, this less expensive food item continues to play an essential role in various cultures and dinner tables around the world. Vegetable stuffed bread is a unique and  flavorful  way of incorporating more nourishment into the simple staple food item - bread.

Making vegetable bread recipe is very easy. Also, is the one of the best recipe for breakfast bread. Homemade bread with vegetables is very soft and delicious, you definitely should try it. Stay tuned!

Vegetable Bread

  • 375g (3 cups) of all-purpose flour

  • 14g (1 tbsp) sugar + 1 tsp salt

  • 7g (2¼ tsp) instant dry yeast

  • 45ml (3 tbsp oil

  • 250ml (1 cup) warm water

  • 1 egg, whisk.

  • Corn, carrot, zucchini  spring onion, red & green bell  pepper.( diced or  very thinly grated)  

  • 1 yolk + 1 tbsp milk to apply on the loaf before baking.

Baking temp: 200°C

Baking time: 25 minutes.  ovens may vary.

Instructions

  1. Using a stand mixer. The recipe can be made without a stand mixer 

  2. Mix the sugar, instant yeast and warm water together. Let it sit for about 2 minutes to activate te yeast. 

  3. Once the yeast is alive, mix in the whisked egg, oil and vegetables until well combined. 

  4. Add in the flour and knead for 10 minutes in a stand mixer 

  5. Cover with a plastic wrap and tea towel

  6. Allow to proof for 45 mins in a warm area. 

  7. Once the dough doubles in size, knead gently to remove all air from the dough. 

  8. Cut into two halves with a pastry knife. Set one half aside and cover with a tea towel to avoid its surface from drying up while you shape and mould one half. 

  9. Roll into a log or round buns. Place the shaped dough into a lightly greased loaf pan. 

  10. Allow the dough to proof a second time for 30 minutes or until doubled in size filling up the loaf pan. Apply the egg wash on the loaf before baking. 

  11. Meanwhile pre-heat oven at 375 degrees Celsius 

  12. Fill an oven-safe pan with water and place it the oven. This is to create steam so the bread does not dry up while baking. 

  13. Reduce the temperature  and bake at 275 and bake for 30 minutes until the bread is golden brown

  14. Place the baked bread on a cooking rack to cool down before slicing. It is very irresistible to break into a freshly baked bread, but it’s important to let it cook down before slicing it up to avoid losing all the steam on the inside. 

  15. Enjoy this flavourful and nourishing bread with your favourite soup or breakfast beverage.
